1. Preheat your oven to 200 °C. Clean and rinse the small potatoes. Dry them and cut them in half.
2. Heat an ovenproof frying pan (cast iron is best) and pour in the olive oil.
3. Add the potatoes and cook until they appear crispy on the surface.
4. Cook the potatoes, turning them frequently, until their skins are golden brown.
5. Push the apples to one corner of the pan to make room. Add the garlic and sauté. Add the herb mixture, salt and paprika. Stir to combine.
6. Turn off the heat and sprinkle the potatoes with parmesan and parsley.
7. Transfer the pan to the oven and roast the potatoes for 15 minutes.
8. Add the cubed butter pieces on top of the dish.
