Sinigang na Hipon (Shrimp in Sour Soup) Recipe

1. Prepare the broth:
In a pot, bring water or rice washing to a boil.
Add tomatoes and onion. Let it simmer for 5 minutes to release their flavors.
2. Add vegetables:
Add radish and simmer for 3 minutes.
Add string beans, eggplant, and green chili (if using). Simmer for another 3-5 minutes or until the vegetables are tender.
3. Season the soup:
Stir in the sinigang mix or fresh tamarind juice. Adjust the sourness to your preference.
Season with salt or fish sauce.
4. Cook the shrimp:
Add the shrimp to the pot. Cook for 3-5 minutes or until the shrimp turns pink. Avoid overcooking.
5. Add the greens:
Turn off the heat and add the kangkong. Let the residual heat cook the leaves.
