It’s a family-friendly meal that can be prepared in no time, making it a great choice for busy weeknights or a casual brunch.
Ingredients:
4 medium-sized potatoes, peeled and diced
2 tablespoons olive oil
1 small onion, finely chopped
1 bell pepper, diced (optional)
1 cup shredded cheddar cheese (or your preferred cheese)
4 large flour tortillas
1 teaspoon garlic powder
1 teaspoon paprika
Salt and pepper to taste
Fresh parsley for garnish (optional)
Directions:
Prepare the potatoes: Heat olive oil in a large skillet over medium heat. Add the diced potatoes and cook until golden brown and crispy, about 10–15 minutes, stirring occasionally. Season with salt, pepper, garlic powder, and paprika. Once the potatoes are cooked, transfer them to a plate and set aside.
Sauté the vegetables: In the same skillet, add the chopped onion and bell pepper (if using). Sauté until the vegetables are soft and fragrant, about 3–4 minutes. Remove from heat.
Assemble the tortillas: Lay out the flour tortillas on a flat surface. Evenly distribute the sautéed vegetables and crispy potatoes among the tortillas. Sprinkle a generous amount of shredded cheese over the filling.
Cook the tortilla: Heat the skillet over medium-low heat. Carefully fold the tortillas in half, creating a half-moon shape. Place each tortilla in the skillet and cook for 2-3 minutes on each side, or until golden brown and the cheese is melted inside.
Serve: Remove from the skillet and let cool slightly before cutting into wedges.
