This Cabbage Roll Soup captures the comforting essence of traditional cabbage rolls—savory ground meat, tender cabbage, and a tangy tomato base—without the hassle of rolling. It’s a simple, satisfying, and perfect meal for chilly days or a cozy gathering.

Ingredients:

For the Soup Base:

  • – 2 tablespoons olive oil
  • 1 pound ground beef or ground turkey (or a combination of both)
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 1 small head of cabbage, chopped (about 6-8 cups)
  • 1 can (14.5 ounces) diced tomatoes (with juices)
  • 1 can (8 ounces) tomato sauce
  • 4 cups beef or chicken broth (or vegetable broth for a vegetarian option)
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon smoked paprika (optional)
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and black pepper, to taste

For the Rice:

• • – 1/2 cup uncooked white or brown rice (or 1 cup cooked rice)

Optional Garnishes:

• • Fresh parsley or dill, chopped

  • – A dollop of sour cream
  • – Crusty bread for serving

Instructions:

Step 1: Brown the Meat and Sauté the Aromatics

  1. Heat the olive oil in a large pot over medium heat. Add the ground beef or turkey and cook until browned, breaking it into crumbles. Drain off any excess fat.
  2. Stir in the onion and garlic, and cook for 3-5 minutes until they soften and become fragrant.

Step 2: Add the Cabbage and Base Ingredients
