Whether you’re looking for a comforting dinner or a make-ahead meal, this cabbage roll soup is the answer.

Ingredients :

  • 1 pound ground beef (or substitute with ground turkey for a leaner version)
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 4 cups green cabbage, chopped into bite-sized pieces
  • 2 medium carrots, peeled and diced
  • 1 bell pepper, diced (any color)
  • 1 can (14.5 oz) diced tomatoes, with juices
  • 1 can (8 oz) tomato sauce
  • 4 cups beef or vegetable broth (your choice)
  • ½ cup uncooked white or brown rice (depending on your preference)
  • 1 teaspoon smoked paprika for a subtle smoky flavor
  • 1 teaspoon dried oregano for a Mediterranean touch
  • ½ teaspoon dried thyme to bring out earthy notes
  • Salt and pepper, to taste
  • 1 tablespoon apple cider vinegar or lemon juice (optional, for an extra pop of acidity)
  • Fresh parsley, chopped, for garnish

Instructions :

1. Cook the Meat

To start, heat the olive oil in a large pot or Dutch oven over medium heat. Add the ground beef (or turkey) and cook until browned, using a spoon to break it up into smaller pieces as it cooks. Once browned, drain any excess grease and set the meat aside. The rich flavors of the browned meat will form the foundation for the soup’s savory depth.

2. Sauté the Vegetables

In the same pot, add the diced onion, carrots, and bell pepper. Sauté the vegetables for about 5-7 minutes until they start to soften and become fragrant. This step allows the vegetables to release their natural sweetness. Stir in the minced garlic and cook for another minute, allowing the garlic to become aromatic and meld with the other vegetables.

3. Build the Soup Base

Next, add the chopped cabbage, diced tomatoes (with their juices), tomato sauce, and broth into the pot. Stir everything together to combine. The cabbage will begin to wilt and infuse the broth with its earthy flavor, creating the base for your soup.
