As a kid, this was my top meal choice. I’d constantly plead with my mom to cook it.

Directions

– Whisk together marinade ingredients in a medium bowl.

– Place pork in a large resealable plastic bag or shallow dish. Pour marinade, ensuring even coating.

– Refrigerate for at least 4 hours, preferably overnight, for flavor penetration.

– Preheat oven to 350°F (175°C).

– Remove pork from marinade, discard remaining marinade.

– Place pork in a roasting pan.

Roast the pork in a preheated oven for 1.5 to 2 hours, or until it reaches 145°F (63°C). Let it rest for 10-15 minutes to retain juices and ensure tenderness.

Slice and serve with your choice of sides.

For a spicier kick, add crushed red pepper flakes to the marinade. Experiment with different herbs for unique flavors. For a sweeter glaze, increase honey or substitute with maple syrup. For a more intense flavor, marinate for 24 hours. You can also use a slow cooker on low for 6-8 hours.
