Baked Surf & Turf Skewers with Chimichurri

Preheat your oven to 400°F (200°C).
In a large bowl, toss the beef and shrimp with the olive oil, salt, and pepper.
Thread the beef and shrimp alternately onto skewers.
Place the skewers on a baking sheet and bake for about 15-20 minutes, or until the beef is cooked to your liking and the shrimp are pink and opaque.
While the skewers are baking, prepare the chimichurri sauce. In a medium bowl, combine the parsley, oregano, garlic, red wine vinegar, olive oil, and red pepper flakes (if using). Season with salt and pepper to taste.
Once the skewers are done, remove them from the oven and let them rest for a few minutes.
Drizzle the chimichurri sauce over the skewers before serving, or serve it on the side as a dipping sauce.

Variations & Tips
Feel free to switch up the proteins – scallops or chicken chunks can be great substitutes! For a more robust flavor, marinate the beef and shrimp in your favorite marinade for a few hours before assembling the skewers. If you’re short on time, pre-made chimichurri sauce from your local grocery store can be a quick alternative. And if you’re grilling instead of baking, these skewers cook beautifully on an outdoor grill – just adjust the cooking time accordingly.
