Banana bread from Jamaica.

Instructions: 

  1. Preheat the oven to 350°F (175°C). 
  1. Put flour into measuring cups without pressing down; even it out with a knife. Mix flour, baking soda, and salt together using a whisk. 
  1. Put sugar and butter in a large bowl. Mix them with a mixer on medium speed until well combined. 
  1. Add one egg at a time, mixing well after each addition. 
  1. In a separate bowl, mix mashed banana, yogurt, rum (or apple cider), and vanilla until well combined. 
  1. Add the flour mixture to the banana mixture and mix at low speed until just combined. Stir in 1/2 cup of shredded coconut. 
  1. Pour the batter into a 9×5 inch loaf pan sprayed with cooking spray. Sprinkle 1 tablespoon of shredded coconut on top. 
  1. Bake in the preheated oven at 350°F (175°C) for 1 hour, or until a toothpick inserted into the center comes out clean. 
  1. Let the loaf cool in the pan on a wire rack for 10 minutes before removing it from the pan. 
  1. In a small bowl, whisk together icing sugar and lime or lemon juice to form a glaze. 
  1. Drizzle the glaze over the warm bread. Let the bread cool completely on a wire rack.
