Instructions:
- Preheat the oven to 350°F (175°C).
- Put flour into measuring cups without pressing down; even it out with a knife. Mix flour, baking soda, and salt together using a whisk.
- Put sugar and butter in a large bowl. Mix them with a mixer on medium speed until well combined.
- Add one egg at a time, mixing well after each addition.
- In a separate bowl, mix mashed banana, yogurt, rum (or apple cider), and vanilla until well combined.
- Add the flour mixture to the banana mixture and mix at low speed until just combined. Stir in 1/2 cup of shredded coconut.
- Pour the batter into a 9×5 inch loaf pan sprayed with cooking spray. Sprinkle 1 tablespoon of shredded coconut on top.
- Bake in the preheated oven at 350°F (175°C) for 1 hour, or until a toothpick inserted into the center comes out clean.
- Let the loaf cool in the pan on a wire rack for 10 minutes before removing it from the pan.
- In a small bowl, whisk together icing sugar and lime or lemon juice to form a glaze.
- Drizzle the glaze over the warm bread. Let the bread cool completely on a wire rack.
