Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
Open the can of crescent roll dough and unroll it. Separate the dough into 8 triangles along the perforations.
Cut each triangle in half lengthwise, making 16 long triangles.
Place a mini sausage at the broad end of each triangle and roll it up towards the narrow end.
Place the rolled sausages seam-side down on the baking sheet.
In a small bowl, beat the egg to make an egg wash.
Brush a little egg wash over each wrapped sausage and sprinkle with sesame seeds if desired.
Bake in the preheated oven for 12-15 minutes, or until the dough is golden brown and puffy.
Remove from the oven and let cool for a few minutes before serving.
