Preparing the topping:
Preheat your oven to 200°C. Roll out the pizza dough on a floured work surface into a circle or oval.
Arranging the ingredients:
On one half of the dough, place the diced ham and the sliced gherkins. Then add a generous layer of grated cheese.
Adding the eggs:
Make two small cavities in the topping and crack an egg into each cavity. Season with a pinch of salt and pepper.
Close the calzone:
Fold the other half of the dough over the filling, forming a half-moon shape. Press the edges tightly to seal them tightly. You can pinch the edges or fold them over to prevent the filling from escaping during cooking.
Brush with oil:
Using a pastry brush, brush the surface of the calzone with a little olive oil to obtain a nice golden color when cooked.
Bake:
Place the calzone on a baking sheet lined with parchment paper and bake for 20-25 minutes, or until the calzone is golden brown and crispy.
