Classic Orange & Lemon Sponge Cake with Dark Chocolate Drizzle

Introduction

Ingredients:
For the Sponge Cake:

1 ½ cups all-purpose flour
1 cup granulated sugar
4 large eggs
½ cup unsalted butter, melted
1/3 cup fresh orange juice
Zest of 1 orange
Zest of 1 lemon
1 tsp vanilla extract
1 tsp baking powder
1 pinch salt
For the Dark Chocolate Drizzle:

4 oz dark chocolate (70% cocoa)
2 tbsp heavy cream
1 tbsp unsalted butter
Directions:
Preheat the oven to 350°F (175°C). Grease and line an 8-inch round cake pan with parchment paper.
Prepare the sponge: In a large bowl, whisk together eggs and sugar until the mixture becomes light and fluffy. Add the melted butter, orange juice, vanilla extract, and the citrus zests. Mix well.
Combine dry ingredients: In a separate bowl, sift together the flour, baking powder, and salt. Gradually fold the dry ingredients into the wet mixture until fully incorporated, being careful not to deflate the batter.
Bake the cake: Pour the batter into the prepared cake pan and spread it evenly. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean.
Cool the cake: Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
Prepare the chocolate drizzle: While the cake is cooling, melt the dark chocolate with the heavy cream and butter over a double boiler or in the microwave. Stir until smooth and glossy.
Drizzle and serve: Once the cake has cooled, drizzle the melted dark chocolate generously over the top of the sponge. Allow the chocolate to set before slicing and serving.
