Ingredients:
For the Cinnamon Rolls:
2 1/4 teaspoons active dry yeast (1 packet)
1 cup warm milk (about 110°F)
1/4 cup granulated sugar
1/2 cup unsalted butter, melted
2 large eggs
4 cups all-purpose flour
1/2 teaspoon salt
1 teaspoon vanilla extract
For the Cinnamon Filling:
1/2 cup unsalted butter, softened
3/4 cup brown sugar, packed
1 tablespoon ground cinnamon
Pinch of salt
For the Cookie Monster Frosting:
1/2 cup unsalted butter, softened
8 oz cream cheese, softened
2 cups powdered sugar
1/2 teaspoon vanilla extract
1/4 cup heavy cream (or more as needed)
2-3 drops of blue food coloring (adjust to desired intensity)
1/2 cup mini chocolate chips
1/2 cup crushed chocolate chip cookies (for garnish)
Instructions:
1. Make the Cinnamon Roll Dough:
In a small bowl, dissolve the yeast and granulated sugar in warm milk. Let it sit for about 5 minutes until it becomes foamy.
In a large mixing bowl, combine the melted butter, eggs, and vanilla extract. Add the yeast mixture and stir until well combined.
Gradually add the flour and salt to the wet ingredients, mixing until a dough forms. If the dough is too sticky, add a little more flour, one tablespoon at a time.
Knead the dough on a lightly floured surface for about 5-7 minutes until it’s smooth and elastic.
Place the dough in a lightly greased bowl and cover it with a clean kitchen towel. Let it rise in a warm place for about 1 to 1.5 hours, or until it has doubled in size.
