- Prepare the Duck Breasts: Trim any excess fat from the duck breasts. Make a horizontal cut in the middle of each duck breast to create a pocket for the foie gras.
- Stuff the Duck Breasts: Cut the foie gras into slices and stuff them into the pockets of the duck breasts. Use kitchen twine to tie the duck breasts and keep the foie gras inside.
- Cook the Duck Breasts: In a large skillet, sear the duck breasts on both sides until they are golden brown. Season with salt and pepper. Transfer to a baking dish and bake in a preheated oven at 180°C (350°F) for about 15-20 minutes, or until cooked to your liking.
- Prepare the Morello Cherry Coulis: In a saucepan, combine the morello cherries, honey, and balsamic vinegar. Cook over medium heat until the cherries are soft and the sauce has thickened slightly, about 10-15 minutes. Blend the mixture until smooth, then strain to remove any solids. Season with salt and pepper to taste.
- Serve: Remove the kitchen twine from the duck breasts and slice them. Serve the duck slices on a plate and drizzle with the morello cherry coulis. Garnish with fresh thyme if desired.
