Directions
In a medium saucepan, bring the water to a boil.
Add the rice into the boiling water, reduce heat to low, and cover.
Simmer the rice for about 20 minutes or until the water is absorbed and the rice is tender.
In another saucepan, combine the cooked rice, milk, sugar, and salt.
Cook over medium heat, stirring frequently, until the mixture thickens, approximately 15 to 20 minutes.
Remove from heat and stir in the vanilla extract and cinnamon.
Serve warm, or chill in the refrigerator until ready to serve.
