Gingerbread Sandwich Cookies are the perfect treat for when you want to embrace those cozy, comforting flavors of winter and the holiday season. Growing up, my mom always baked gingerbread for us, and the aroma that filled the house is something I’ll never forget. For busy professionals like us, these cookies are great because they’re quick to make and absolutely delicious. Plus, they’re a hit at office parties or as a gift for neighbors!
These cookies are fantastic on their own, but if you want to serve them with something extra, try pairing them with a hot cup of chai or a rich vanilla latte. They also make a delightful end to a casual dinner with friends or family. If you’re feeling fancy, you could even serve them alongside a scoop of cinnamon ice cream for an indulgent twist.
