Honey Roasted Carrots with Whipped Feta

Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper or foil for easy cleanup.
2. Prepare and Roast the Carrots

Arrange the carrots on the prepared baking sheet. In a small bowl, whisk together the honey and olive oil, then drizzle over the carrots, using your hands to coat them thoroughly. Sprinkle with salt.
Roast in the preheated oven for 30 minutes, then turn the carrots. Reduce the heat to 350°F (175°C) and continue roasting for an additional 15 minutes, or until carrots are tender with slight charring.
Season with freshly ground black pepper to taste.
3. Make the Whipped Feta

While the carrots are roasting, combine the feta, Greek yogurt, honey, and lemon zest in a food processor. Blend on low until the mixture is smooth and creamy.
4. Assemble the Dish

Spread the whipped feta in an even layer on a serving platter. Arrange the roasted carrots on top of the feta. Sprinkle with pomegranate seeds and chopped pistachios.
Finish with a drizzle of honey and a squeeze of lemon juice for extra brightness, if desired
