Instructions
Preheat oven to 200°C (390°F) and line a baking sheet with parchment paper. Cut the chicken breast into small pieces, about the size of a croquette.
In a small bowl, whisk the eggs. In another bowl, mix the breadcrumbs with the garlic powder, onion powder, salt and pepper.
Pour the wheat flour into a third bowl. Dip each piece of chicken in the wheat flour, then in the beaten egg and finally in the breadcrumbs, making sure to coat them well at each step.
Place the breaded chicken breasts on the prepared baking sheet. Lightly spray the nuggets with vegetable oil.
Bake in the preheated oven for about 15 to 20 minutes, or until golden brown and cooked through, turning halfway through to brown evenly.
Remove from the oven and let cool slightly before serving.
More tips
Use high-quality chicken breasts and cut them into small pieces. Try to avoid using frozen chicken, as it can hold more water and compromise the final consistency of the nuggets.
For an extra crispy coating, dip the breaded chicken pieces in the beaten egg and then the breadcrumbs a second time before frying.
Serve the nuggets with a variety of homemade sauces such as ketchup, barbecue sauce, honey mustard sauce or yogurt sauce with fresh herbs on the side.
