Preheat your oven to 425°F (220°C).
In a large bowl, combine the potatoes, Lipton onion soup mix, and olive oil. Toss until the potatoes are evenly coated.
Spread the potatoes in a single layer on a baking sheet.
Roast in the preheated oven for 25-30 minutes, or until the potatoes are golden brown and crispy, stirring halfway through.
Season with salt and pepper to taste before serving.
