4 pounds peeled and diced sweet potatoes
1 1/2 cups miniature marshmallows
1/4 cup packed brown sugar
1/4 cup melted unsalted butter
2 teaspoons ground cinnamon
1 teaspoon vanilla extract
1/4 teaspoon ground allspice
1/4 teaspoon ground nutmeg
Instructions:
1. n a bowl, mix melted butter, brown sugar, cinnamon, vanilla extract, nutmeg, and allspice.
2. Place the diced sweet potatoes in the slow cooker.
3. Pour the butter and spice mixture over the sweet potatoes and toss to coat them evenly.
4. Cover the slow cooker and cook on low for 6-8 hours (or high for 3-4 hours) or until the sweet potatoes are tender.
5. Sprinkle the miniature marshmallows over the top. Cover again and cook on low until the marshmallows are melted and slightly golden. This will take around 7 mins.
Serve the slow cooker sweet potato casserole warm and enjoy!
