Mediterranean-Inspired Layered Casserole Recipe

A rich and flavorful casserole blending Mediterranean ingredients and spices, perfect for a hearty dinner.


Ingredients

  • 1 lb ground lamb
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 1 can diced tomatoes (14 oz)
  • 1/2 tsp ground cinnamon
  • 2 cups fresh spinach
  • 2 medium eggplants, sliced
  • 1 cup béchamel sauce (store-bought or homemade)
  • 1/2 cup grated parmesan cheese

Method

  1. Cook the Lamb Mixture
    • In a skillet, sauté the ground lamb with the diced onion and minced garlic over medium heat until the lamb is browned.
    • Add the diced tomatoes and cinnamon, stir well, and let simmer for 10 minutes. Adjust seasoning with salt and pepper to taste.
  2. Prepare the Eggplant
    • Preheat the oven to 400°F (200°C).
    • Arrange the eggplant slices on a baking sheet, lightly brush with olive oil, and season with salt.
    • Roast for 15–20 minutes until tender, flipping halfway through.
