Mediterranean-Inspired Layered Casserole Recipe
A rich and flavorful casserole blending Mediterranean ingredients and spices, perfect for a hearty dinner.
Ingredients
- 1 lb ground lamb
- 1 onion, diced
- 3 garlic cloves, minced
- 1 can diced tomatoes (14 oz)
- 1/2 tsp ground cinnamon
- 2 cups fresh spinach
- 2 medium eggplants, sliced
- 1 cup béchamel sauce (store-bought or homemade)
- 1/2 cup grated parmesan cheese
Method
- Cook the Lamb Mixture
- In a skillet, sauté the ground lamb with the diced onion and minced garlic over medium heat until the lamb is browned.
- Add the diced tomatoes and cinnamon, stir well, and let simmer for 10 minutes. Adjust seasoning with salt and pepper to taste.
- Prepare the Eggplant
- Preheat the oven to 400°F (200°C).
- Arrange the eggplant slices on a baking sheet, lightly brush with olive oil, and season with salt.
- Roast for 15–20 minutes until tender, flipping halfway through.
