When the dough has risen well, use your fists to gently degas it by pressing it lightly. This will eliminate excess air bubbles and obtain a more uniform brioche.
7️⃣ Shaping:

Shape the dough into one or more balls according to the desired size. Place them in a brioche mold or on a baking sheet covered with parchment paper, making sure to space the pieces well if you are making several.
8️⃣ Second rise:
Cover the dough again and let it rise for 30 to 45 minutes in a warm place, until it puffs up slightly.
9️⃣ Preheating and preparing in the oven:

Preheat your oven to 180°C (thermostat 6). Just before putting it in the oven, beat the egg yolk with a teaspoon of water to make the egg wash. Gently brush the top of the dough with this mixture, then sprinkle with flaked almonds for a crunchy touch.
🔟 Cooking:

Bake the brioche for 20 to 25 minutes. Monitor the cooking: the brioche should be golden and a knife inserted in the center should come out clean. If the surface browns too quickly, you can cover the brioche with a sheet of aluminum foil.
