My aunts used to make this, and I thought it was a thing of the past. But guess what? I found it, and it’s tastier than ever!

1/2 cup cherry tomatoes, halved
1/4 cup red onion, thinly sliced
1/2 cup croutons
Salt and pepper to taste
Directions
Cook the bowtie pasta according to package instructions. Drain and rinse under cold water to cool.
In a large bowl, combine the cooked pasta, diced chicken, Caesar dressing, and Parmesan cheese. Mix well to coat everything evenly.
Add the chopped romaine lettuce, cherry tomatoes, and red onion to the pasta mixture. Gently toss to combine.
Season with salt and pepper to taste.
Just before serving, sprinkle the croutons on top for added crunch.
Serve chilled or at room temperature.
Variations & Tips
For a lighter version, use a yogurt-based Caesar dressing. You can also add some grilled asparagus or roasted red peppers for extra flavor. If you prefer a vegetarian option, omit the chicken and add more veggies like artichoke hearts or olives. For a bit of spice, sprinkle some red pepper flakes or add a dash of hot sauce to the dressing.
