My Georgia friend showed me this dish, and we haven’t stopped making it!

2/3 cup milk
2 eggs, lightly beaten
2 cups peeled and diced apples (Granny Smith or similar)
Vegetable oil for frying
Powdered sugar for dusting (optional)

Directions
In a large mixing bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt.
Create a well in the center of the dry ingredients. Pour in the milk and eggs, stirring until just combined.
Gently fold in the diced apples, ensuring they are evenly distributed in the batter.
Heat vegetable oil in a deep skillet over medium heat. The oil should be about 2 inches deep.
Once the oil is hot but not smoking, drop the batter by heaping spoonfuls into the oil, being careful not to overcrowd the pan.
Fry each fritter until golden and crispy, about 3-4 minutes per side. Use a slotted spoon to remove the fritters and drain on paper towels.
If desired, dust the warm fritters with powdered sugar before serving.
