  1. Slice the Zucchini

    In a large skillet, heat the olive oil over medium heat. Arrange the zucchini slices in a single layer and cook for 2–3 minutes on each side, until they are nicely browned and tender.
  3. Top with Cheese
    Lower the heat to a simmer. Sprinkle the mozzarella and Parmesan evenly over the zucchini rounds. Cover the skillet and let the cheese melt for 1–2 minutes until bubbly.
  4. Garnish and Serve
    Transfer the cheesy zucchini to a serving dish, sprinkle with chopped parsley, and serve while hot.
