2 small chipotle chili peppers in adobo sauce, seeds removed
1/4 cup Worcestershire sauce
2 tablespoons unsalted butter
1/4 cup apple cider vinegar
1 cup water
1 tablespoon smoked paprika
1/2 teaspoon freshly ground black pepper
1 cup bourbon
1 tablespoon minced garlic
4 cups ketchup
Instructions:
1. In a large saucepan, melt the unsalted butter and heat the olive oil over medium heat.
2. Add the chopped vidalia onion and minced garlic. Sauté until the onion is soft and translucent.
3. Stir in the fresh peaches and cook for a few minutes until they start to break down.
4. Pour in the bourbon and chiptole peppers and let it simmer for a couple of minutes (~10 mins) to cook off the alcohol.
5. Pour mixture in blender to smooth. Put blended mixture back into pot. Add in the remaining ingredients.
6. Allow the sauce to simmer (and be covered) over low heat for about 20-30 minutes, stirring occasionally, until it thickens and the flavors meld. Stir often to prevent burning.
Once the sauce has reached the desired consistency, remove from heat and let it cool slightly.
Let the sauce cool completely before transferring it to sterilized jars or bottles.
