Pineapple Meatballs

In a large skillet, cook meatballs until golden brown. Remove and set aside.
In the same skillet, sauté peppers and onion until tender.
Add pineapple chunks with their juices to the skillet.
In a bowl, mix soy sauce, rice vinegar, brown sugar, and minced garlic. Add this mixture to the skillet and bring to a boil.
In a small bowl, mix cornstarch and water to make a paste. Add this paste to the skillet to thicken the sauce.
Return meatballs to the skillet, coating them with the sauce.
Serve hot over cooked rice.
