Quiche Vegan Recipe

Instructions: For the Crust:

  1. In a food processor, combine the flour and salt. Add the chilled vegan butter or coconut oil and pulse until the mixture resembles coarse crumbs.
  2. Gradually add ice water, one tablespoon at a time, and pulse until the dough begins to come together.
  3. Turn the dough out onto a floured surface and gently knead it into a ball. Wrap it in plastic wrap and refrigerate for at least 30 minutes.

For the Filling:

  1. Preheat your oven to 375°F (190°C).
  2. In a blender, combine the crumbled tofu, plant-based milk, nutritional yeast, and olive oil. Blend until smooth and creamy. Set aside.
  3. In a skillet, heat a bit of olive oil over medium heat. Sauté the chopped onion, garlic, and red bell pepper until softened.
  4. Add the chopped spinach or greens to the skillet and cook until wilted. Season with salt and pepper.
  5. Combine the sautéed vegetables with the blended tofu mixture and stir to combine.

Assembling and Baking:

  1. Roll out the chilled dough on a floured surface to fit your pie dish. Transfer the rolled dough to the dish, pressing it gently into the bottom and sides.
  2. Pour the tofu and vegetable mixture into the prepared crust.
  3. If desired, sprinkle vegan cheese shreds on top.
  4. Place the quiche in the preheated oven and bake for about 35-40 minutes, or until the filling is set and the crust is golden brown.
  5. Allow the quiche to cool slightly before slicing and serving.
