Preparing the mussels:
Cleaning the mussels:
Rinse the mussels under cold water and remove the beards. Discard any that are open and do not close.
Cooking the mussels:
In a large saucepan, heat a little water. Add the mussels and cover. Cook over medium heat for about 5 minutes, until the mussels open. Discard any that remain closed.
Prepare the filling:
In a frying pan, melt the butter over medium heat. Add the garlic and shallot, then sauté until translucent.
Add the crumbled stale bread (or breadcrumbs) and mix well. Cook for a few more minutes until the mixture is golden brown.
Fold in the grated cheese, parsley, paprika, salt and pepper. Mix until well combined.
Fill the mussels:
Preheat the oven to 200°C (390°F).
Arrange the opened mussels on a baking sheet, then fill each mussel with the bread and cheese mixture.
Gratin the mussels:
Place the baking sheet in the oven and brown the mussels for 10 to 15 minutes, or until they are golden and crispy on top.
Serve:
Serve immediately, drizzling with lemon juice if desired. Serve with bread for dipping
