1. Preheat your oven to 400°F (200°C). This is the perfect temperature for roasting our star of the show!
2. Pat your whole fish dry with paper towels and make 3-4 shallow slits on each side. This will help those delicious flavors get in there!
3. Rub the fish all over with olive oil, minced garlic, paprika, oregano, chili flakes (if you like a kick), salt, and pepper. Don’t forget to season the cavity and those slits!
4. Set the fish on a baking tray lined with aluminum foil or parchment paper. Time to surround it with some vibrant veggies!
5. Nestle those cherry tomatoes, sliced red onion, and lemon slices around your fish. Drizzle olive oil over the veggies and sprinkle with a pinch of salt to enhance their natural sweetness.
6. Wrap the foil around the fish loosely, sealing it tight to trap all that steam goodness. Pop it in the oven and roast for 20-25 minutes, depending on how big your fish is.
7. After the fish is beautifully roasted, open the foil and switch to broiling for an extra 3-5 minutes. This will give you that crispy, golden skin we all crave!
8. While the fish is broiling, whip up a simple sauce by whisking together olive oil, lemon juice, Dijon mustard, honey, salt, and pepper.
9. Once everything is ready, garnish your fish with fresh parsley and serve it alongside those roasted veggies and lemon wedges. Pair it with crusty bread, rice, or a side salad, and you’re all set!
