3. Once your potatoes are cool enough to handle, season them with the spice mixture.
4. Wrap each seasoned potato bite with a half-slice of bacon, securing it with a toothpick.
5. Place the wrapped potato bites seam side down onto the prepared wire rack.
6. Bake in the preheated oven for 20 to 25 minutes, or until the bacon is crispy to your liking.
7. Sprinkle the baked potato bites with shredded cheese and return them to the oven for another 2-3 minutes, just until the cheese has melted.
8. Let the potato bites cool slightly. Garnish with chopped chives and serve with sour cream for dipping, if desired.
