1. Preheat the oven to 375 degrees F.
2. Prepare a 13×9 baking pan by pouring the melted butter into the center of the dish.
3. In a medium sized bowl, combine the self-rising flour and white sugar.
4. Add the milk and vanilla extract into the flour mixture.
Stir until it is just combined.
5. Pour the batter over the butter in the prepared baking dish (do not stir).
6. In a medium saucepan, cook the brown sugar, peach slices, and lemon juice over medium-high heat.
Cook until the sugar is melted and the peaches have released their juices.
7. Pour the peaches on top of the batter, again not stirring.
Make sure the peaches are evenly spread out.
8. Bake for 40-45 minutes, until the cobbler top is golden brown.
9. Allow the cobbler to sit for 10 minutes before serving.
10. Serve warm or cold.
