This light and refreshing strawberry mousse is perfect for a summer dessert.

Fresh Strawberries 2 cups
Granulated Sugar 1/4 cup
Lemon Juice 1 tablespoon
For the Mousse:
Heavy Cream 1 1/2 cups
Powdered Sugar 1/2 cup
Vanilla Extract 1 teaspoon
Gelatin 3 teaspoons
Cold Water 1/4 cup
For Garnish (Optional):
Fresh Strawberries
Mint Leaves
Whipped Cream
Instructions:
Make the Strawberry Puree:
Wash and hull the strawberries.
Cut strawberries into small pieces.
Blend strawberries, sugar, and lemon juice in a blender until smooth.
Bloom the Gelatin:
Sprinkle gelatin over cold water in a small bowl.
Let it sit for 5 minutes to soften.
Microwave for 10-15 seconds to dissolve completely.
Whip the Cream:
In a large bowl, beat heavy cream, powdered sugar, and vanilla extract with an electric mixer until stiff peaks form.
Combine Ingredients:
Gently fold the strawberry puree into the whipped cream.
Add dissolved gelatin and fold gently.
Chill the Mousse:
Pour mousse into individual glasses or a serving dish.
Cover with plastic wrap and refrigerate for at least 4 hours, or overnight.
Garnish and Serve:
Garnish with fresh strawberries, mint leaves, and whipped cream (optional).
Serve chilled.
