1-Preheat the oven to 200 ° C.
2-In a bowl, mix the meat with the egg, breadcrumbs, salt and pepper, paprika and mustard. Mix well until all the ingredients are incorporated.
3-On a tray with aluminum foil, spread the meat until it occupies the entire surface of the tray, then place a layer of Gouda cheese, slices of ham and spinach on top. Using the aluminum foil, close the roll and compact well to give it the shape.
4-On another tray with aluminum foil, place the bacon slices on top of each other until you completely cover the tray, place the meat roll on top and roll it with the bacon, then wrap it in aluminum foil to compress well and cook.
5-Bake for 15 minutes covered with aluminum foil, then remove from the oven, open the aluminum foil and cook without aluminum foil for 10 more minutes. Let rest 10 minutes before slicing.
