1. Season the pork chops with salt, pepper, ground cumin, and smoked paprika on both sides.
2. In a large skillet, heat the olive oil over medium-high heat. Sear the pork chops for about 2 minutes on each side, just until they’re nice and browned. This will lock in those incredible flavors.
3. Transfer the pork chops to the slow cooker. Add the chopped red onion, minced garlic, and diced red bell pepper on top of the chops.
4. Pour the jar of mango salsa over the pork chops and vegetables, making sure everything is evenly covered.
5. Cover the slow cooker and cook on low for 6-8 hours, or on high for 3-4 hours, until the pork chops are tender and the flavors have melded together.
6. Once done, serve the pork chops with the mango salsa sauce spooned over the top. Garnish with fresh cilantro before serving.
