Sweet and Spicy Chicken Bites

1/4 cup soy sauce
1/4 cup honey
2 tbsp sriracha sauce
2 tbsp rice vinegar
1 tbsp sesame oil
1 tbsp cornstarch (to thicken)
Toppings:

Shredded mozzarella or cheddar cheese 🧀
Chopped green onions 🌱
Instructions:

Prepare the chicken: In a large bowl, mix together flour, salt, pepper, garlic powder, paprika, and cayenne pepper. In another bowl, whisk together the egg and milk. Coat the chicken pieces first in the egg mixture, then dredge in the seasoned flour mixture, pressing to coat evenly.
Fry the chicken: Heat vegetable oil in a deep pan over medium-high heat. Fry the chicken pieces in batches, cooking until golden and crispy (about 4-5 minutes per batch). Remove from the oil and set aside on paper towels to drain excess oil.
Make the sauce: In a small saucepan, combine soy sauce, honey, sriracha, rice vinegar, and sesame oil. Bring to a simmer over medium heat. In a small bowl, mix cornstarch with a tablespoon of water, then add to the sauce to thicken it. Stir constantly until the sauce is glossy and thickened.
Toss the chicken: In a large bowl, toss the fried chicken bites with the sweet and spicy sauce until evenly coated.
Add cheese: Place the sauced chicken bites on a serving plate, sprinkle with shredded cheese, and pop it under the broiler for 1-2 minutes until the cheese melts and gets bubbly.
Garnish and serve: Top with freshly chopped green onions for a burst of color and flavor.
