The entire family goes wild when I cook this.

1. Preheat your oven to 400°F (200°C) and lightly grease a baking sheet.
2. Cut the chicken breasts into bite-sized pieces and place them in a large bowl.
3. Core and slice the bell peppers into similar-sized chunks and add them to the bowl with the chicken.
4. Drizzle the olive oil over the chicken and peppers, then sprinkle with garlic powder, smoked paprika, salt, and pepper. Toss to coat everything evenly.
5. Thread the chicken and pepper pieces onto the skewers, alternating between chicken and peppers.
6. Place the skewers on the prepared baking sheet and bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the peppers are tender.
7. Remove the skewers from the oven and immediately sprinkle them with shredded cheddar cheese. Return to the oven for an additional 3-5 minutes, or until the cheese is melted and bubbly.
8. Serve hot and enjoy the cheesy, savory goodness!
Variations & Tips
For a bit of spice, try adding some diced jalapenos to the veggie mix or sprinkle a little cayenne pepper in with your seasonings. You can also switch out the cheddar for other cheeses like Monterey Jack or a blend of mozzarella and parmesan for a different flavor profile. If you’re a fan of grilling, these skewers can easily be cooked on a hot grill instead of in the oven, just be sure to keep an eye on them to avoid overcooking.
