In a bowl, combine the cheddar cheese, mozzarella cheese, a pinch of salt and pepper, and the dried oregano or thyme if using.
Cut the puff pastry into 8 equal squares.
Place a generous spoonful of the cheese mixture in the center of each square.
Fold each square into a triangle and press the edges with a fork to seal.
In a small bowl, mix the beaten egg with milk to create an egg wash.
Brush the tops of each pastry with the egg wash.
Transfer the pastries to the prepared baking sheet and bake for 15-20 minutes, or until golden brown and crispy.
Let them cool slightly before serving.
