This recipe immediately grabbed my attention, and I knew I had to make it. It turned out amazing!
Preheat your oven to 375°F (190°C).
In a large mixing bowl, combine the cooked chicken, cream of chicken soup, milk, and chicken broth. Stir until well blended.
Season the mixture with salt and pepper if desired, then spread it evenly into a 9×13 inch baking dish.
Sprinkle the shredded cheddar cheese evenly over the chicken mixture.
In a separate bowl, combine the stuffing mix and melted butter until the stuffing is moistened.
Spread the stuffing mixture evenly over the top of the casserole.
Cover the dish with foil and bake for 20 minutes. Then, remove the foil and bake for an additional 10-15 minutes or until the stuffing is golden brown and crispy.
Let the casserole cool for a few minutes before serving.
Variations & Tips
For a lighter version, you can use low-sodium chicken broth and cream of chicken soup. If you’re a veggie lover, add in a cup of frozen mixed vegetables or some chopped broccoli to the chicken mixture for extra nutrition and texture. For those who enjoy a bit of heat, try adding a pinch of red pepper flakes or some diced jalapeño into the chicken mix. If you’re out of cheddar cheese, mozzarella or a Mexican cheese blend will work beautifully too. Make sure to adjust the seasoning to your preference and don’t be afraid to get creative!
