We skipped takeout and made this recipe instead, and it did not disappoint!

  1. Layer your slow cooker with the thinly sliced beef.
  2. In a bowl, whisk together the beef broth, soy sauce, brown sugar, garlic, and sesame oil. Pour this mixture over the meat in the slow cooker.
  3. Cover and cook on low for 4 hours, or until the meat is tender and cooked through.
  4. About 30 minutes before serving, in a small dish, mix the cornstarch with water until dissolved, then stir into the slow cooker to thicken the sauce.
  5. Add the broccoli florets on top of the meat and sauce. Cover and cook for an additional 30 minutes, or until the broccoli reaches your desired tenderness.
  6. Serve the beef and broccoli over white rice and, if desired, garnish with green onions and sesame seeds.

Tips and Variations:

  • Saves Time: Use frozen broccoli florets to skip the chopping and toss them into the slow cooker.
  • Sweetness: Adjust the amount of brown sugar to taste. You can reduce it for a less sweet dish or increase it for a touch more sweetness.
  • Protein Options: Use chuck roast for a tender cut of beef. Alternatively, use flank steak or pre-cut stir-fry beef for a quicker option.
  • Spice it Up: Add sriracha or red pepper flakes for an extra kick of heat.
  • Vegetable Substitutes: Try snap peas, bell peppers, or baby carrots for a delicious variation.

This well-planned dinner almost cooks itself while you’re busy winning the day. Slow Cooker Broccoli and Beef is a perfect way to eat healthy even when you’re pressed for time—just set it and forget it. Enjoy a delicious, home-cooked meal without the hassle!
