Zucchini and Oatmeal Cutlets

Ingredients:

1 zucchini (350g)
2 eggs
100 grams of cheese, grated
chopped
1 potato
1 clove of garlic, minced
1 carrot
Salt, to taste
Black pepper, to taste
Paprika, to taste
4 tablespoons oatmeal
1 teaspoon Herbes de Provence
2 tablespoons flourDirections

  1. Prepare the Vegetables:
    Grate the zucchini, carrot, and potato. Place the grated zucchini in a colander, sprinkle with a little salt, and let it sit for 10 minutes to draw out excess moisture. Then squeeze out the excess water from the zucchini using a clean kitchen towel or cheesecloth.
