Preheat the oven

Preheat your oven to 180ยฐC (thermostat 6).
Prepare the zucchini

Cut the zucchini in half lengthwise.
Carefully hollow them out with a spoon to create โboatsโ. Reserve the flesh.
Prepare the filling

Heat olive oil in a skillet over medium heat.
Add the onion and garlic, and sautรฉ until translucent.
Cut the reserved zucchini flesh into small pieces and add it to the the pan. Cook for 5 to 7 minutes, until the zucchini is tender.
Stir in the shrimp, crรจme fraรฎche, grated cheese, parsley, and paprika (if using). Mix well. Salt and pepper to taste. Stuffing the zucchini

Arrange the hollowed-out zucchini on a baking sheet.
Fill each zucchini โboatโ with the shrimp and cheese filling.
Baking

Bake the stuffed zucchini for 15 to 20 minutes, until the cheese is well melted and lightly browned.
Serve and enjoy

Sprinkle the zucchini with fresh parsley before serving. You can also add a little extra grated cheese for even more flavor.

For a more intense taste, you can add a little grated parmesan on top before cooking.
