Wash the courgettes 🥒 and cut them in half lengthwise. Scoop out the flesh with a spoon, leaving a thin layer near the skin. Cut the flesh into cubes and set aside.
2️⃣ Filling:
Heat olive oil in a pan 🥄. Add the chopped onion 🧅 and fry until golden brown. Add the pressed garlic 🧄 and fry briefly. Add the minced meat 🥩 and fry until brown. Add the diced pepper, zucchini flesh and tomatoes 🍅. Season with salt, pepper, paprika powder and oregano 🌿. Let the mixture simmer gently for 10 minutes, until the filling thickens.
3️⃣ Filling the zucchini:
Place the zucchini in an oven dish. Fill each half with the prepared filling. Sprinkle with grated yellow cheese 🧀.
4️⃣ Baking:
Place the dish in a preheated oven (180°C) and bake for 25-30 minutes, until the zucchini is soft and the cheese is golden brown.
5️⃣ Application:
Sprinkle the prepared zucchini with fresh parsley 🌿 and serve immediately. Tastes great with garlic bread or rice.
