Ingredient Preparation: Before you begin, take your ingredients out so that they are at room temperature. This helps to mix them well.
Dough Mix: In a large bowl, add the almond powder, egg whites, Stevia, and orange zest. Use a spatula or whisk to mix until you have a smooth dough. The texture should be slightly sticky.
Resting in the Fridge: Once the mixture is made, cover the bowl with plastic wrap or a clean tea towel. Place the dough in the fridge overnight. This allows the flavors to develop and gives a better texture to the cookies.
Forming the Sausages: The next day, preheat your oven to 160 degrees Celsius. Remove the dough from the fridge. On a work surface lightly dusted with almond powder, divide the dough and form a sausage about 6 cm in diameter. Wrap it in baking paper if it makes it easier to handle.
Cutting and Shaping the Cookies: Cut the sausage into slices about 1.5 cm thick. Then, take each slice and, with your fingers, lightly shape to elongate the cookies. This will give them a nice shape and a pleasant texture.
