Banana bread from Jamaica.

Banana Coconut Rum Bread Recipe 

List of Ingredients: 

  • 2 cups of regular flour 
  • 3/4 teaspoon of baking soda 
  • 1/2 teaspoon of salt 
  • 1 cup of white sugar 
  • 1/4 cup of soft butter 
  • 2 big eggs 
  • 1 1/2 cups of mashed ripe banana (approximately 3 bananas) 
  • 1/4 cup of plain low-fat yogurt (or pina colada flavored, if preferred) 
  • 3 tablespoons of dark rum or apple cider 
  • 1/2 teaspoon of vanilla extract 
  • 1/2 cup of shredded sweetened coconut 
  • 1 tablespoon of shredded sweetened coconut (for topping) 
  • 1/2 cup of icing sugar 
  • 1 1/2 tablespoons of fresh lime or lemon juice 
  • Cooking spray
