Blueberry Cream Cheese Puff Pastries Recipe

These flaky, fruity pastries are perfect for breakfast or dessert! The creamy filling and sweet blueberry topping make them irresistible.

Ingredients:
Blueberry Filling:

18 oz container fresh blueberries
1/3 cup sugar
1 tsp lemon juice
7 tbsp water, divided
3 tbsp cornstarch
Cream Cheese Filling:

8 oz cream cheese, room temperature
1/3 cup sugar
1 tsp lemon juice
1 tsp vanilla extract
Puff Pastry:

2 boxes of puff pastry shells (follow package instructions for baking)
Instructions:
1. Prepare the Blueberry Filling:
In a small saucepan, add blueberries, sugar, lemon juice, and 3 tablespoons of water. Stir and heat over medium-low heat, bringing the mixture to a gentle boil. Boil for about 4-5 minutes, stirring occasionally.
In a separate bowl, mix the remaining 4 tablespoons of water with the cornstarch until smooth. Pour this mixture into the blueberry saucepan and stir until the filling thickens.
Remove from heat and let it cool.
