Creamy Meatball Tortellini Soup

Ingredients:
1/4 cup grated Parmesan cheese (for serving)

Meatballs:

1 lb ground beef (or a mix of beef and pork)

1/4 cup breadcrumbs

1 egg

1/4 cup grated Parmesan cheese

1 tsp garlic powder

Salt and pepper to taste

1 tsp Italian seasoning

Soup Base:

2 tbsp olive oil or butter

1 onion, finely diced

2-3 garlic cloves, minced

2 carrots, sliced

1 cup mushrooms, sliced

1 tbsp tomato paste

1/2 tsp paprika (optional)

4 cups chicken or vegetable broth

1 cup heavy cream

1 package (9 oz) cheese or meat tortellini

1/2 tsp dried basil (or use fresh if available)

1/2 tsp dried oregano

Salt and pepper to taste
