 Step-by-Step Instructions

Step 1: Make the Mascarpone Pudding

  1. In a large mixing bowl, whisk together the instant pudding mix and cold milk until it begins to thicken (about 2 minutes).

  2. In a separate bowl, beat the mascarpone and powdered sugar until smooth and fluffy.

  3. Gently fold the pudding into the mascarpone mixture.

  4. In another bowl, whip the heavy cream and vanilla extract until soft peaks form.

  5. Carefully fold the whipped cream into the mascarpone-pudding mix until fully combined. Chill until ready to assemble.

Step 2: Prep the Coffee Soak

  1. Brew your espresso or strong coffee and let it cool slightly.

  2. Stir in the optional coffee liqueur or rum for added depth.

Step 3: Assemble the Pudding Cups

  1. Break the ladyfingers into bite-sized pieces and lightly dip them in the coffee mixture—don’t over-soak.
